Most banana bread recipes make two loaves, which was fine when we had four children at home. Now that there is just the two of us, I decided to create a recipe for just one loaf by combining the best ideas from a few different recipes. It was recipe success on the first try. This bread is so moist that even the end pieces are delicious. The fragrance while it is baking is reason enough to make it.

Ingredients
  • 1/3 cup organic shortening
  • 1 1/4 cups cake flour
  • 3/4 cup sugar
  • 3/4 teaspoon baking powder
  • 1/2 teaspoon teaspoon
  • 1/2 teaspoon salt
  • 3/4 cup bananas mashed ripe
  • 1/3 cup milk
  • 1 teaspoon apple cider vinegar
  • 1 egg
  • 1/3 cup chopped walnuts or pecans (optional)
Servings: loaf
Instructions
  1. Sift dry ingredients into a mixing bowl.
  2. Add shortening and mix until somewhat combined.
  3. Add vinegar to milk and let set for a few minutes to sour.
  4. Add bananas and half the sour milk. Beat by hand for two minutes.
  5. Add remaining sour milk and egg and beat for an additional two minutes.
  6. Fold in nuts if using.
  7. Turn batter into a well-greased loaf pan.
  8. Bake at 350 degrees for about 35 minutes or until a toothpick inserted in center comes out with moist crumbs attached (but not raw batter).

Baked Berry French Toast

This easy breakfast casserole is berry delicious and perfect to serve for brunch or when you have overnight guests. The combination of berries creates their own sauce, so maple syrup isn’t necessary unless you want a bit more sweetness.

Ever since learning that berries are a super food, we try to eat at least a handful every day. Berries are low in calories but extremely high in nutrients. They have the highest antioxidant capacity of any food. Because of that they neutralize free radicals in your body. They’re good for your heart, help prevent cancer and new studies indicate that they are also nature’s Viagra.

Plus, they taste delicious! I add them to smoothies and toss them in salads. They’re wonderful on a bowl of granola in the morning and they are divine when baked as they are in this recipe.

Ingredients
French toast layer
  • 1 loaf Scala bread
  • 6 eggs,
  • 1 1/4 cups milk
  • 1/4 teaspoon baking power
  • 1 teaspoon pure vanilla extract
Berry layer:
  • 12 ounces fresh blackberries
  • 12 ounces fresh blueberries
  • 6 ounces fresh raspberries
  • 3/4 cup pure cane sugar
  • 1/4 cup all-purpose flour
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmet
  • 1 tablespon organic salted butter

Instructions
French toast layer:
  1. Slice bread into thick slices and fit into a 9 by 13 inch baking pan.
  2. Mix eggs, milk, baking powder and vanilla extra together with a whisk.
  3. Pour the mixture over the bread, cover with plastic wrap and refrigerate overnight.
Berry layer:
  1. Pour berries into a colander and rinse thoroughly and drain.
  2. In a medium mixing bowl, combine berries, sugar, flour, cinnamon and nutmeg. Stir gently to combine.
  3. Grease a second 9 by 13 inch baking pan with the tablespoon of butter.
  4. Pour berries into the baking pan and spread to evenly cover the bottom.
Assembly:
  1. Carefully place the egg soaked bread slices on top of berries. If any egg mixture remains in the original pan, pour it over the top of the bread.
  2. Bake in preheated 350 degree oven for 30 to 40 minutes, until top is golden brown and a knife inserted into the center comes out clean.
  3. Let French toast rest for five minutes. Cut into six squares and serve with pure maple syrup.
